They are the first level of constructable building, it goes tower -> fort -> castle.

So are those are for defensive purposes purely or are they needed to build the barracks/market etc?

Alright, there's an unfortified garrison at 96,69.

the guide says once CON hits 40 switch to maxxing out each classes main attribute.
(and yes, I checked- he does recommend the same for archers)
That is wrong. Your archers need to take one heavy hit, 2 max. And unless you get a few unlucky rolls they will. You should only level AGI on an archer (which gives you defense- a naked AGI 90 character will have better defense than a str 90 one decked out in ridiculously upgraded plate) doing a con-agi build will just make him an unnecessary heal sink.
Even with the rest of your party, I would advocate for a 20 con build over a 40 con one- 99% of the time, you won't need that much HP, and the harder you hit, the less turns is wasted during the fight. (taking less damage also means you can run a 1-priest party, especially considering that a 70 div priest will heal better than a 40 div one)

Ok, noted that on the map. I'll work on a separate garrison and dungeon editor later on, since those can come and go unlike cities.

If I leave my party of level fives, sixes and one seven there overnight, will I come back to a slaughterhouse of PCs?

I think your guys will manage to kill everything that comes along. At the very worst, some rare high-level monsters will attack and you'll get 2-3 deaths. That will costs money to revive, but you still gain on XP, which is something you can't buy with money.

I had one garrison where I left 1 x level 8 warrior, and levels 1-3 for the rest. They did ok for a couple of days with no losses, but eventually 5 gorgons came along and killed half the low-level guys. This included a level 1 mage and priest though, so they weren't prime defenders.

Okay, I guess they'll be fine then. I'll try to pick up a placeholder party member before logging off, as that'll give me another priest in the garrison.

Here's a typical days combat log for my garrison, so you know what sort of things will attack. i have 6 characters in there, but it includes 3 level 15 characters that I've retired because I didn't like how I spent their skill points. I had a previous garrison, where they fought 33 battles.

Im thinking 40 con seems real high at the minute also.

Im keeping track of HP/CON on level up. Its early days yet for me (lv7) but im seeing it converge on 0.3 Hp gain average per con across the board, no difference in class (no mage data). The boost warriors get at character creation seems one off. The value ranges from 0.11-0.60 so far. The range of HP my archers and warriors have is fairly consistent to match this assumption. The priests are way behind - but both of them came with real low HP and CON from purchase - in fact they were stupid low, 4HP on a lv2, 10HP on a Lv3. If I remember rightly a Priest at creation starts around 7? So seems the random characters you buy are out of sync with the HP gains im seeing on standard level up.

I wondered to the nearby towns, figured I should note what's there (don't have access to the editing of the map thing, though also including sold Artifacts and a Screencap of the recruits)

I have an indestructible handaxe (7,5) with +5 poison. I'm going to upgrade it unless I find something better. Weapons with a +1 to a particular type of enemy aren't that great, you probably don't need to mention them. The good ones have a number of bonuses, or combine that with indestructible so they can be massively upgraded. I sold a lot of low-level indestructible weapons to the last shop in waspnesse 2 days ago, they included some which had bonuses to certain things, but I had too many of these.

I think cities which had "None" on the blacksmith when people explored them before might be the best chance of finding a new God-like one now.

What happens if a party is wiped out totally on garrison regarding resurrection?

Is there any reason to spend 15 turns to set up a garrison just for over night, or does leaving the group in the wild standing just do the same?

My garrison was wiped, and the nearby healer started moving them to the morgue over the course of ~2 weeks.
