First of all, if you have one crossbow and two hunters then you're asking for confusion. Just disable one of them.

Select the one that you do want to hunt and make sure he has these items equipped:
A Crossbow
A Quiver

Select the quiver to make sure it contains bolts, and make sure he has the labor enabled.

Then, use the "u" menu to make sure there are some huntable things on the map. Dwarves won't hunt Badger Men, for instance, since they're humanoids. Make sure he has a path to them: if your front door is locked, or if they're on the opposite side of a unbridged river, the Dwarf won't try.

If all of these things are okay and you're still having issues, I dunno.

I try to always have an overstock of quivers, bows, bolts, arrows, and such so that they ALWAYS have what they need and one guy doesn't take the other guy's quiver or ammo. More IS better.

It's done at a leatherworks. You'll need leather to make one, of course.

It can also be done at a clothier's workshop. Yer gonna need some cloth.

Uhhhh...I don't think so.  I think you can make leather or candy quivers, but not cloth.

I've seen plenty of cave spider silk quivers in the piles of goblinite I've sold off to caravans.

Goblins can make cloth quivers. Dwarves can't

I never realized that. Obviously I've never tried to make cloth quivers. Thanks.

Edit: And if your dwarves manage to bring down an Elephant...the roasts...THE ROASTS! *drool*

Yeah, I had a fort with elephants wandering around. Sometimes I'd go into the trade goods selection menu and hit d to order by value, and one of the top items would be something like  "Elephant Meat(112)". And once a decent cook gets his hands on it, those roasts are indeed impressive.

Of course, it takes a while to butcher an elephant, since the butcher shop is ☼CLT☼ the instant the hunter drags the carcass in.

Several options:
1. From trade.
2. Butcher an animal (either an animal you brought or perhaps one of those that came pulling your wagon?).
3. Wrestle or use any other weapon to kill a wild animal with your dwarves, after you assign them to a squad (you probably have an axe and a crossbow at least).

Whatever works, but make sure you have a butcher and a tanner set up beforehand if you pick method 2 or 3.

Also, if you choose method 3, you'll need to set "dwarves gather refuse from outside" in standing (o)rders->(r)efuse, set up a refuse stockpile near your butcher's shop, and be sure to queue the butchery job yourself.

Hunters are good about bringing their kill back to the butcher's shop and automatically queueing a buchery job (as long as auto butchery is on in standing orders), but the military consider it somebody else's problem.
