I've yet to find magma convenient enough to make it worth building pump stacks to the outside for defensive purposes early on. Usually I just bunker down behind walls. Lots of walls.

All you need is a single "arched" room - Building Destroyers can't destroy anything on the Z-level above them.  Make it so anyone entering your fort, or going over a wall, has to go up stairs through a floor hatch to get inside your fort.  Lock the floorhatch if something unsavoury turns up and you're safe.

But then I have no outside. I like to keep as many of my dwarfs as I can from becoming cave adapted, having an outside area to pen my animals, and that way, I have somewhere I can grow outdoor plants.

Simple, embark on a plateau. Dig the up stair/hatch blockade up from the ground level...ground, and have it open into the dwarven front yard of the century.

You can dig out an area, expose it to the sun, then roof it over. Apparently aboveground plants need UV rays embedded into the dirt, along with a minor amount of water.

Dwarves escape adaptation in this manner as well.

So I'm planning on a noble magma bath. What does magma destroy besides creatures, non built items that aren't magma safe, and engravings?

I think the only things that are safe are magma safe stuff and any & all constructions.

A very short and specific list of rocks and metals also have a melting point high enough to be magma immune, and stuff crafted from these aren't destroyed.
They're mostly reallllly rare, though.

Glass is magmaproof and can potentially be infinitely obtainable if you have sand on your embark.

The seasons had come and go, and excavations were completed. The magma sea had been struck, along with many metals. Very little adamantine had been gathered, as semi-molten rock was blocking much of the way. Grand spires of stone and metal rose through the magma, piercing the earth. The blue metal veins flowed through the SMR like the lifeblood of the land, feeding the rock above. Preparations were made to fight Hell itself, and construction had begun. A window was to be placed above the kill zone, for the starting seven to view their handiwork. All the blood of the land shall flow unto Hell!

i think that would ruin the point of using ponies for it

As I've heard, they're quite infinite, you can only hold them at bay, but eventually, someone WILL die, then someone else will decide she loved the guypony that died and will jump after him.... And so on and so forth, until only Necro remains, who hopefully was only acquainted with his ponies... Imagine the real Necro910 jumping into the nearest volcano if/WHEN his ponies die...

Oh, he'll be shouting MAGMA or CUPCAKES.... wonder which...
