The last one is a great idea indeed. I would also suggest large team-battle tourneys that took place on the walkways surrounded by water/lava/vertical drops. To prevent fighters from fleeing, you could cover both ends of the walkways in lava.

>On wave n, n zombies are spawned
>If any of the entrants or pets dies, a zombified version of them spawns next round
>You get money for each wave your survive
>You get a small amount of money for each zombie you personally finish off
>You get a large amount of money if your zombified self finishes off anyone

btw, I tested this with all the current gladiators versus 42 wolves. Not a single Gladiator or Pet died. Now, I know zombies are tougher, be prepared to wait a while for something interesting to happen
