How too cook a MASSIVE creature?

So there I am in Crystalforged , my latest fortress and a Hydra decides to try and ruin my day.  Hydras are weak apperently because a hunter took him out and promptly hauled him to the butcher for slaughtering.

I want some hydra roasts so i went into the kitchen menu and turned cook off for all the non hydra foodstuffs that i have and set my kitchen to Lavish. 

What is happening is he hauls in the giant stack of hydra meat and organs and then quits before creating some roast hydra.

Any one have an idea how i can get them to cook it?

As any other food.

My dwarfs cook titans and others like ordinary food. Product looks like "snow titan roasts [370]".

I think you need more than one type of cook-able item in order to make a meal. So if the kitchen is completely filled up with just hydra meat it's not gonna work. It needs hydra meat plus something else. Try building a few more kitchens.

The kitchen gets filled with hydra meat, hydra brain, eye intestines ect so theres plenty of varity, it just gets super cluttered and the job never gets done

Oh so you mean he doesn't cancel the job, rather it just takes too long because of the clutter?

No, I've never experienced dwarves giving up on a job simply because it's taking too long. Usually once they've started a task they'll keep at it unless interrupted by a creature or you manually remove them from the task. I've had a dwarf butcher something huge for like a month, and he didn't stop mid-way.

I don't know why he's hauling so many items into the kitchen in the first place. Try placing some food stockpiles near the kitchen, and try making a few more kitchens.
I'd also try making only one type of hydra product cook-able at a time together with a few other normal foodstuffs and see if that stops your dwarves from hauling so much stuff into the kitchen at once. Make sure the kitchen is clear before trying it, though.

If you're worried that your worker is getting too tired/thirsty/hungry, you can probably suspend the task temporarily to give them a break, without losing the completion you have so far on the task. Might be worth it if it improves the finishing quality.

I can say I've had a tanning task completed by a completely untrained worker in a masterwork cluttered workshop, took about a month of game time as I remember. Not sure whether he took breaks to drink/eat/sleep in the middle, or whether someone might have brought him food and water, but in my case, he did survive the ordeal at least, without suspending the task.

If you can't afford your kitchen shut down for a whole month, but want to cook it...I'd suggest building a second kitchen to do more mundane cooking.

Legendary cook made me "roast [370]" in around 7-10 days.

It's going to take a very very long time, but it should not pose a problem. I think the stuff doesn't rot when being processed.

Its going to take something like 8 times as long as normal to cook that meal.  Use your highest skill cook, if you have one.

That's completely normal and usually not a problem, unless your cook is very inexperienced. Butchering and cooking large animals does take some time and then some more, because the workshops get cluttered right away. If your cooks aren't legendary yet, suspending the job every few days, is indeed a good method to stop them from "Urist McNoviceCook cancels make roast: Getting some booze/food/sleep."
I once got some giant panda (had firebreath too) that needed several months to be completely cut up and cooked into delicious roasts...

That hasn't been a problem since 40d - dwarves keep working on a task until it's completely finished, even if they get hungry/thirsty/drowsy.

you could set your dwarfs speed to [Speed:0] for a few so he moves/dose things lighting fast
