Does it have any effect to combat or anything like that? Because in my current fortress EVERY SINGLE DWARF is tall and even though I have been ambushed 3 times already, I have lost no dwarf and they are smashing the gobbos with their (Very limited) Wrestling skills

Dwarves aren't tall. You'll have to explain that.
Descriptor attributes don't have a significant impact on combat; even if it says they're very muscular or something. It depends on their actual attributes and skills. Goblins are pretty weak, and wrestlers are surprisingly effective for limiting casualties.

I thought "Weak" or "Muscular" was actually referring to their attributes in relation to their racial average?

Bad example, as that might be true. Sorry.
Things like tall and fat don't have much impact on the game. Their biggest effect is on butchering returns.

Size has an impact on combat, if tall fat and short influence that then there would probably be a slight but noticeable advantage. What he's experiencing probably is luck but since you can't take this into the arena SCIENCE is difficult here.

Also I did some SCIENCE and weak/muscular at least do refer to stats.

Height and broadness factor into creature size, with a slider of 7 points.  If I recall, the dwarven limits are 75% and 125% on both, allowing a dwarf to by very tall and very wide, and be a notable size larger than another dwarf.  Size changes combat, so a dwarf can get something like 150% size advantage if they're just right.  This is ultimately moot because dwarves are powerful due to their higher than other races' strength, their size doesn't play as huge a roll.

Ultimately, pressure plate science must be applied.
