This is my idea. I build a small 1 square room that connects to the volcano via floodgate. I put bars on the bottom of the room so the magma will flow in. Beneath that room I put a 1 square cell with bars on the bottom. And beneath that cell, I put another cell with bars on the bottom, and so on and so on. Finally, the last cell stops above the cavern so the magma will drain out. In each of those cells, I put a goblin.
Would this idea work?

Use magma safe bars and mechanisms, and pull a lever to open each level?

Nah, I already stripped them. And even if I didn't, if I only give them a light magma shower, they'll just be burned badly and bleed to death. Their items will be fine. And it was very tedious, but I opened up the cages with levers outside each of those cells.

Left the volcano, right the "tower", above the cavern. This would require a pump and probably additional plumbing if you want to refill them. Your plan is better and sounds doable.

Actually, you could build a pumpstack with 1x3 spaces on each stack and make the 1x3 space the "cell".  2/3 chance to burn. (considering the middle square is usually immediately taken by the pump above)
