I'd prefer a (r)oom designation like from a bed. The whole system could be rolled into room designations.
The workshop queue could be based off a different cursor selection, working like i does for zones but highlights rooms. Or just keep the queue as an option in the query over the "anchor" piece of furniture, but that would add another hotkey and clutter to the room menu.

(q)uery, (r)oom, resize to your liking, default room type is based off the furniture you designated from but you're given the whole list of possible rooms/workshops.
You could have a bedroom, dining room, office, and jeweler's shop all rolled into one room assigned to your baron/jeweler so he'd never have to leave the room. He could even keep encrusting his own furniture to make him even happier about his lot in life stuck in one room with a ton of magma sitting 3 feet above his head.

I just realized this thing has 4 pages. Wow. Yeah,  but how would you define what building makes what room? Does a barrel make a brewery or a lye workshop thingy?

maybe each workshop would require a certain specific item (for example, a metalworking shop requires, and is designated from an anvil, say)

OR

it could be that each item has a list of rooms you can designate from it- similar to how beds are now, where it can be made a bedroom, then a barracks/dormitory. each item could have an attached list of rooms.

alternately, it could simply be a zone where you can slap down tools and buildings- leading to the hilarity of figuring out why a 15 year fortress has a millstone in the seige weapon workshop.

And then multiple items could create the same workshop. For example a forge(We need one.) would make the same thing as an anvil but would have more/different jobs to do.

I would designate rooms from a location (x-y-z) rather than a piece of furniture. Then when querying the room you get a list of all the jobs, and you can indicate which ones you permit there. The jobs in that list can be colour-coded so you can easily see for which jobs adequate furniture is present.

It has the advantage of flexibility: you can add or remove jobs in a workshop on the fly. No more process fat jobs in the food kitchen! You also don't have to wait until the furniture is placed before designating a room, you can designate the room and place the furniture, all in one go. Also you can change the main pieces of furniture without the room disappearing.

Exactly like zones, you have a list of all the possible workshop settings and you can turn any/all/none of them on as you see fit, but they're only actually active if they contain the necessary furniture. If the room contains the furniture pieces needed for a workshop, that workshop's entry in the room list will be a brighter color.

So say you have a room designated from a barrel that also covers a table and an oven. In the designation menu you have the option to turn any of the workshops on, but only Kitchen and Brewery are highlighted, and only jobs from those two workshop queues will be acted on by your dwarves.
