Why do kobolds try to ambush a full militia squad several magnitudes of awesome more skilled and well-armed than they?

Because, what everyone doesnt get, is that Goblins overall goal is to undervalue the price of iron to destroy the dwarf econ.

Miasma is colored purple-ish, reminding them of nobles. Or the perfume of nobles.

How are worlds created, from the view of their inhabitants?

Why... do my dwarfs refuse to go outside and get a drink of water, even though all the barrels are currently full of food or plants, so I can't brew any more booze? I'm pretty sure one is about to drop dead of thirst...

First check your burrows.
If that's not the problem, then they're just to good for such plebian affairs as drinking water.

Why do bridges atom-smash and fling things? It's not as if there's any motion, they just instantly transition from vertical to horizontal (and vice-versa). If anything, they should be stabbing themselves though people when they materialize or act like a trapdoor.

They actually move so fast that it only appears to be instant. The velocity is great enough to obliterate anything underneath!

Dwarves know you can only look at them from the top down so their walls are actually just piled stones

Why do masons and carpenters insist on prioritizing wall building in a way prevents them from finish the corners of rooms?

Because they do last things ordered first, and everyone orders the corners first. This, and they don't like standing in corners.

Why can you build stairs out of a stone boulder, then deconstruct them and get the exact same boulder back?

Giant badgers are cruel saddistic balls of fur and hate. Did anyone know they could paint a wall with a single dwarven baby?.... You know what, I made the Giant badgers sound like sane DF players.

Because they don't actually build stairs; they just plop down a boulder that looks relatively stair-like and hope it works.

Why does DF water insta-freeze? Shouldn't the water become super-cooled instead if the temperature changes that quickly?

Because ice is either on or off, and the temperature change determines which it is.

On that subject, why do dwarfs freeze solid instantly in ice, but completely ignore the cold weather when walking around outside in 2 cloaks a pair of socks, and nothing else?

Because they're too busy to stop and make sure they give birth in a safe environment.

Why are dwarf clutches of more then a single baby so rare, anyway?

Dwarven babies often fight Highlander style while in their mothers' stomachs. Sometimes they don't, but that only happens if one of the parents is part elf.
