On sieges, you get Goblin swordsman, Goblin bowman and etc... I think this should be Swordsgoblin, Bowgoblin. Same with elves.

It's a pretty quick modification.  Just look in the creature_standard.txt and look at the profile for dwarves.  In there they have a list of custom profession names.

Copy that block over to the race of your choosing, and enter the names you'd rather have.
