Although I <3 Bradley, I think I would've played as one of those bullet-shooting Shyguys from Mario 2 had they been available. :3 I love Shyguys. They're kinda cool.

That's a Snifit!  And remember Shyguys have a time honored tradition of trying to ride weird stuff too!  Like giant guns or birds, magic carpets?  (Also Bradley is my fav in game character. I'd have taken boo but any boo after bradley will just not be as good.)

Thanks for the praise and the correction. ^^ It's been a while since I've played SMB2 so all I remembered about that enemy was that some Shyguys spit bullets. Anyway, that might be a good racial ability for Shyguys/Snifits (bonuses to mount-type items like ostriches and those vehicles. Or maybe just the ability to try and ride certain kinds of enemies. Seeing a Shyguy leap onto, say, an enemy Koopa Troopa would be pretty funny).

Yeah, like how Red morphed from a Koopa to a Parakoopa. Alternatively, there are different colors for Koopas, and a Snifet could be like a different "color", though I like to think of it branching out like Race -> Optional Sub-species of race -> Color.

Ehh I'll figure something out. As far your star mode form, it may surprise you.

And the shy guy star mode... well, I'm not without inspiration. But it's different for each character.

You're probably not going to see too many races from the Post-N64 era. However, I wouldn't consider... actually, wait, that's plot relevant. Nevermind.

Also, here's some inspiration.
This link led me to discover that there are enemies in Mario games and LoZ games that parallel one another. Specifically, [pick a spoiler [or both [in which case I'd recommend looking at the pictures first]]:]
Okay, maybe that first pair is a bit far-fetched, but I swear Freezards were shaped like a dragon version of the front half of a sphinx whenever I saw them. Kinda hard to make out the shape on a computer rather than in-game because their shininess kinda helped define it. Also they breathe ice, which is like the fire thing in Gaos only not fire.
