and i may be rusty on the subject but all that is needed is that he becomes  novice of a knight like you and  when you cant learn him more, you make him an knight

to clear things up you need to award him land to knight him. Either by gaining a new Province or by establishing new hamlets/villages/towns in your existing province and award one or more of those to him. I know it's not historically conform but it makes it more rewarding for the soon-to-be Knight and more dangerous for the lord as this knight has now the power to break the vow and keep the lands he was awarded. That makes him basically an Outlaw, however if he manages to get acknowledged by at least one other lord he will join as a full player/serve the acknowledging lord like he did before...

I send 20 of the peasants to Ahra to use for whatever. (Looks like fixing the fishing boats, but if he thinks of something else he is free to do so.)
I send 5 of the Militia, 15 peasants, and 100 food to Elfeater to use for his projects.
I send 30 peasants to make a lumber jack...ing... Place... To make a place to gather wood.
I take 5 of the Militia, 5 peasants, and 50 food with me well I set off north. I will meet with the Jormungandrs and offer them a gift of food and a offer of alliance, or at least a trade pact. Well I am there, I will find out the family structure of the Jormungandrs, maybe to see if the leader has a daughter or sister I can marry.

Okay while doing the plan, continue to train my five militia and gather food while we travel as well as the other peasents, but to a lesser extent and train three of said peastents as archers or slingers
