I'd really like to see the new 'undead army' thing combined with the old 'tame exotic creature' mechanism.  Something like:
  • Some god teaches Hippy McElf the secret of taming the honey badger.
  • Hippy McElf goes to the wilderness, begins taming honey badgers.
  • Hippy McElf declares himself to be the "king of the honey badgers".
  • Hippy McElf creates army of honey badgers, runs around attacking stuff and ravaging the countryside.
Depending on the tamed exotic creature, this could range from the dangerous ("lord of the elephants") to harmless ("lord of the ducks") to surreal ("lord of the snails").  Either way, I figure it would be cool.

I'd also like to see different fighting style passed down, which give bonuses to different stats of the dwarf (e.g. better dodging). These could be 'invented' occasionally when someone enters a martial trance. Almost like artifacts for soldiers.
I know this was discussed in FotF and I'm fairly sure Toady said this was a distant-future goal.

Or maybe animate them into sludge monsters for extra !!Fun!!.
I like this idea, but it would guarantee that idlers would become preoccupied with cleaning blood.
On a side note, I noticed a dwarf cleaning soil walls the other day. It was kinda weird.

Gotta say...
I just want a ladder. :/

And no one can convince me I don't need one. Anyone who tries hasn't thought of everything a ladder could do.

Cant a set of up/down stairs do pretty much everything a ladder can??
Except be easily re/moved.

The ability to build anachronisms, like blackpowder, firearms, steam engines or flying machines?

Since the "tech level" for Dwarf Fortress is the 14th century, firearms aren't actually an anachronism.

I'd like secrets like necromancy or something like pyromancy to be able to be learned by your civ leader, like your king or queen, and them be able to use it when they eventually arrive in your fort.

A dwarven military led by a dwarven king shooting fire out of his hands into the middle of a elven siege would be awesome.

I'll see your Lord of the Dragonsand raise you a set of Clowns. You just know someone will find a way to tame those bastards in Adventure mode if this comes in.

What's wrong with using magma? That's almost always the easiest method.
I have issues channeling it properly to do that method. I end up flooding the fortress with magma.

That's kinda because if he wants to insert something he wants to do it Right. Gunpowder to make firearms shoot is really easy in comparison to Gunpowder that will blow up the entire embark site (fort, caverns, mountain, magma sea and all else).

Mining via blasting...oh god...

I'd like to see alchemy do something useful, like manufacture poisons or specialist ammo for your siege weapons/marksdwarves ie. alchemists fire, acid etc. Also a secret application for engraving and gem setting which let's you build runes as furniture that have various effects or inlay them into weapons, armor and other furniture to produce various upgrades. Sword does more damage against undead, hospital bed has extra healing properties, booze barrel generates extra happy thoughts when drunk from, that kind of thing

Hey guys I think I've bred the perfect war beast for us! I crossed an owl and a bear, I call it an Owlb*RAAAAAAAAAWR*OHGODMYARMS!

Perhaps a giant eagle and a giant badger would be a better choice? "Beware the Giant Eaglebadger!"
