Regarding armour and weapons

Currently I'm setting up an iron-clad army however each time I get them to organize/move to a point they seem to go and grab ALL of their stuff before heading out. How do I make them keep it with them, all the time?

Turn off mining/hunting/wood cutting for all of them.

Only one of them has hunting and the others dont have any of those three things.
The one hunting is a marksdwarf so it shouldn't make much of a difference right?

As it turns out, the pen was in fact a poor choice for melee combat in comparison to the sword.
So I just started playing this game and I accidentally nuked the moon.

If you are manufacturing new equipment between times when you station them, they often only go to pick up the new stuff when they are activated. You can get them to go pick up the new equipment by quickly stationing then un-stationing them (they keep the "get new equipment" job).

They should upgrade as better gear comes along, by value. So -copper mail shirt- would get replaced with +steel mail shirt+.

The exception is getting attached to certain pieces, like shields and weapons. Don't leave them with wooden training swords for very long. One of my high guardsmen is using an -iron spear- instead of adamantine because he grew attached to it.... even dumping won't help.

Also it seems like they upgrade by rank/seniority, if that matters.

They automatically pick up better equipment in their assigned equipment range (mail shirts, for example). If you assign each a specific piece of equipment, I don't think they'll swap it out unless you assign something else.

I can confirm that I was able to successfully get one of my Swordmasters to drop an Obsidian Short Sword that he had grown attached to and replace it with a masterwork Steel Short Sword.

I did it by creating a new uniform called "Nothing" with absolutely nothing assigned and set to "replace clothing", and assigning the swordsdwarves that uniform.  They dropped all their stuff and put it back in the stockpiles.  I then marked the obsidian short swords for dumping/forbid to get rid of them.  Then I re-assigned the regular uniform and they all went and picked up the better quality Steel Short Swords.

Yeah, turns out just removing indiv choice and assigning him the mastercraft steel spear that my other squaddie upgraded from worked just as well without making him strip down for shore leave. I really wish you could call up weapons descriptions on the equipment assignment screen.
