And now I have 10 attacking my 1 proficient steel wearing Swords Dorf from all angles.
While my axeman trying to kill a Normal Cave Spider.
What do I do?

Apply magma. If this doesn't fix it, you didn't apply enough. Steel is magma-safe, so you can drain and reclaim his crap.

Use the HFS to take care of those olms. That should almost assuredly solve the olm problem.
