I hypothesize that the most dwarven defense is a dwarf.

I mean, how much more dwarven can you get than a dwarf?

...Multiple dwarves ?

...and all of them on fire, standing on adamantine floor grates, over a sea of magma.

and the grates are menacing with spikes of obsidian. and there is engraved Cheese on it. and a dwarf on fire.

“Well,” he said. “We’re in the Forgotten hunting grounds I take it. Your screams just woke them up early. Congratulations, Lyara.”
“Do something!” she whispered, trying to keep her sight on all of them at once.
Basileus clapped his hands once. The Forgotten took a step forward, attracted by the sound.
“There, I did something. I clapped. I like clapping,” he said. -The Investigator And The Case Of The Missing Brain.

10 Crossbow dwarves, mounted on my walls to repel the incoming siege. The enemy consists of 30 bowgoblins and assorted trolls/leaders.
Fearing inevitable waves of lucky bow shots (how freaking lucky can goblins get?!?! i had one slot an arrow through my fortifications, and hit a dwarf in the TOOTH!) i call my bowmen to safety. All save one heed the call. Thob Zatdumat Olumgiken, Elite Marksdwarf, decided to stand his ground and open fire. One martial trance later he had downed 8 goblins and taken 4 arrows in reply. Unfortunately one hit him in the hand, removing it. He died of blood loss before i could get him down off the walls. Until he actually passed out he remained at his post, raining more and more bolts upon the enemy with his one good hand, presumably loading his crossbow sarah-connor style... or with his teeth. He injured most of the incoming siege, and 3 further goblins died of injuries before my melee unit chased the survivors off the map.
I am currently constructing his gold-encrusted tomb and lining the walls with captured goblins and minotaurs in cages as eternal guardians.

THIS.

Hands down, for me. I cast the obsidian with magma from a volcano and water from my underground lake. It's supported by a single pillar linked to a lever inside the fortress. IT IS A GIANT DORF BEING DROPPED ON THE ENEMY. Bonus points acquired when the casting started a wildfire.

It may be worthwhile to have the babies fall into ring of fortifications or windows, to prevent anyone from catching and saving them.

Put magma inside the dorf. Then you get a dorf bonus for your dorf dorf. The dorf will dorf the non-dorf dorfs without mercy, but with extra dorf. Non-dorf dorfs will fear the dorf of your dorf dorf dorf!

Y'know, that's an extremely dorfy idea. It might even light another wildfire. :U
I'm currently playing on another fort, but if/when i get back to it, i'll definitely add a layer of magma on top of the gigadorf.

I was playing with DFHack and accidentally set the map on fire.  I now seek to cause fires at will that will fill a given area.  Current idea is to make a finished goods stockpile, no bins, only accepting wooden goblets.  They should burn fairly well.  Otherwise, perhaps just some soil and grass, and I can use a flooding trap while the grass recovers.

Actually the most dwarven defense I can think of is your ENTIRE fortress, fully clad in exceptional steel plate armor  and brandishing various deadly weapons, charging a goblin siege head-on, shouting battle cries like "BLOOD FOR THE BLOOD GOD", "MY LIFE FOR ARMOK", or other badass boasts.

Including steel-clad children and babies, plus with the entirety of the fortress's animals as well.

All whipped into a blood frenzy by a rousing speech from the expedition leader.

Fill the wood with cheap elven booze, and then... just add magma!

+Bonus points if you use modded booze made from elves.

There, I dwarf'd it up a notch 8)

+Bonus points if you use modded booze made from elf blood. All elves must also be miserable and must slowly bled to death in an exceptional wooden cage menacing with wooden spikes on top of your wooden brewer's workshop. Possibly the wood that these same bleeding elves brought to you.

There, I dwarf'd it up a notch 8)

Fixed. Bah. Small-scale villain.

Nice.

But you forget that bleeding isn't too painful. You must use wooden repeating spike traps!

Repeating training wooden Warhammers? break every bone slowly as you milk the blood from their bodies?

That won't work. If they stand still (Or if they are unconscious), weapon traps won't attack them.

Spike traps work, they work even better if they are linked to a lever.

From On the Origin of Dwarves (http://df.magmawiki.com/index.php/On_the_origins_of_dwarves):
A dwarven woman, bare from the waist up, holding a suckling newborn in one hand and a battle ax in the other, charging toward you.

Don't forget both the mother and her baby have beards.  :o
