I used to hate the taste of cheese, but I've slowly been building up a tolerance.  I have no real preference so far.

I haven't tried that many cheeses i think, mostly the big names, they are nice i guess, youg cheese (or cottage cheese i think is the proper english name) is really nice in general food uses and goes well with almost anything.My favourite kind is this yellow, soft, easily meltable and a bit stretchy, hard to cut cheese that is slightly bitter, but my mom always forgets its name so i have to rely on luck to eat it X(

And just so the OP doesn't shoot me for derailing the thread...I love cheese, but I'm increasingly lactose-intolerant, which is a bitch and a half. So soft cheeses (especially commerically-made ones that speed up the fermentation process) are hell on my digestive system. So I wind up sticking to firm, aged cheeses. I find that I prefer Cheddars, Gouda, Munster, and Jarlsberg.

Brie on toasted crostini is awesome, although usually tears me up afterwards.

I'd like to try more sheep and goat cheeses, as I've enjoyed the ones that I have tried. They seem better for cooking with than just noshing on though.

My Cookbook (the good one... not the joke cook book) actually has a recipe for a really good Goey Cheese Bread

As well as Cheese Pie and a Pumpkin Cheese Pie.
