I can understand that healing might be sped along by giving water only. But if it came down to dying of thirst, or giving an unconscious person some beer or wine, I think I'd give them the booze. Unfortunately the dwarves don't seem to make that decision, just letting wounded people dehydrate if... say... the water outside is frozen even though there are 300 some odd units of booze in storage.
