An unfortunate dwarf in my wife's fortress had its left hand lopped off at the wrist by a goblin master thief, and yet in their inventory they still have:

dwarf blood spatter (left hand),
vomit covering (third finger, left hand),
vomit covering (second finger, left hand),
vomit covering (fourth finger, left hand),
vomit smear (left hand),
vomit covering (thumb, left hand),
vomit spatter (first finger, left hand)

The hand is definitely missing; the object "Bomrek Tobulsazir's rotten left hand" is lying on the ground next to him, as well as the mitten and glove that was once on it.

I'm picturing a mass of grime affixed to the empty space where the left hand used to be, forming a hand-like shape due to the fact it's retaining the original position it had on the hand.
