I don't see why they shouldn't be included. I remember Toady saying in a DF Talk that if you can prove something existed before the 1400s (the historical cut off point for DF) then it could be included.
AFAIK you remember it wrong. Toady is against guns, amen.

dwarves are extremely connected to the earth, which is why they are always mining, and why can link a lever and another device using only 2 mechanisms. they could never do something that would destroy earth.

earth.. not trees.
or I should say ores/rocks I guess...
and Dwarves seek shelter in the earth, they find their ores for metals in the earth, they find their gems in the earth, and they grow their fields in the earth so that they may brew a mighty brew.

Given that gunpowder was used for mining long before guns, some equivalent thereof would probably be reasonable.  But then again, when Toady finishes the magic arc it may be that specific utility of gunpowder becomes irrelevent.

guns would be kind of silly, but gunpowder would still be cool

once you had explosions with proper physics, you could make your own cannons by putting gunpowder and stones in metal tubes, maybe

A booze reservoir, a large amount of pumps, a narrow hallway and some fire.

Free-flowing booze would have a thousand uses, not the least of which would be creating "dwarven wine mist" waterfalls in the meeting hall.  Sure, one spark and the fortress goes up like the Hindenburg, but until then you can get drunk simply by breathing the air, which would save our dwarves a lot of time.

As far as grape shot there are mangonels. Basically the equivalent but it's a catapult.
