Of course, the real lesson to be learned is that you shouldn't have dig out the final section from inside the moat, you should have had him stand on the ground level and channel out that last section of dirt from above. Then he would have been perfectly safe (unless an alligator got him or something like that - there is no "perfectly safe" in DF).
Live and learn (or die and learn in this case).

That's exactly what I tried to make him do, but he refused to dig from anywhere but the most dangerous part of the cave-in. I tried to wall off the other side, and my men kept walling theirselves on the wrong side. I was getting so irritated that I just decided it was time for my guy to die. 30 minutes of my life wasted on something like that...I frankly didn't care that he was a legendary miner.
Here is what i do when moating:
First clear area above designated area of trees and boulders
Channel the inner part, create a safety ramp at a distant wallpart, clear any ramps beside that safety ramp
Evacuate area and then overbuild safety ramp with a floor or walltile (from above!)
Channel border wall from the mid to outside
To avoid waterramps in the moat, channel one piece wider each side at the border wall and overbuild with wall or floor tile (from above!)
