Temperature Question

If temperature is turned off, does water still freeze? Example: It's the dead of winter, does the river/brook freeze? Does a dwarf-made pool freeze?

I want to know before I turn off temperature, so I know what will happen to the rivers and pools.

No, it won't freeze.  Also, ice won't melt, so don't turn temp off when everything is frozen if you want liquid water.
