OK, try this.

Find a lake or an ocean, or an area you can easily fill with water.  Your objective is to carve a fortress in solid rock and then drop it into the water in such a way that the entire fort is underwater, there is no way out, and the inside is sealed from the elements, hence making it watertight.

Therefore, you will need to find a geological feature around which you can put water, or some natural "hill" inside the lake.  In any case, it goes to say you cannot use constructions at all, or else they'll disintegrate once you collapse the whole thing.

Its easier to dig on a temperate area with a river.

The hermit challenge consists of allowing only ONE of the starting seven :P

It's treated as completely normal because this is Dwarf Fortress.  There's absolutely nothing wrong with surrounding yourself with a wall of flames, only to later realize that you're surrounded by a wall of flames.
There's nothing that can't be solved by hurling fifteen roc birds at it.

I am talking about the 7-dwarf variant hermit challenge. Only one dwarf is kinda boring.

Make a superdwarf, legendary in every skill. :P

Add a mosaic on each z-level that animates like a flipbook when you cycle down really fast. Maybe recreate the DF opening movie?

I wish we could get proper zombie hordes.  The kind that shamble and moan, driving their captors insane as the groaning goes on and on, fingernails scraping against sheet metal while howling grates against the mind.

Either way, that doesn't sound appealing.  I'm all for a challenge, but having no mechanics and no skill is just suicide in a can.  It's not a challenge because there's no challenge to it, there's only swift defeat.  You have to give an opportunity to survive, and then meet that with a threat of equal force.

Actually I think 50-100 adept steel dwarves would kick the butt of any goblin siege.  You'd eventually lose through trickling casualties and a tantrum spiral, but who plays a fort past 10 years right?
 
As for zombies, I think we could make like a semi-zombie.  Reduce it's speed to hardly anything, give it an annoying syndrome from bite attacks, etc.  I wonder if drastically increasing their population size can increase siege size so you get an actual horde of zombie.

I am trying to make chickens lay bees as eggs. So far it only produces a single "Tame Small Creature" when a hen lays bees.
Honestly at the time, I didn't see what could go wrong with crowding 80 military Dwarves into a small room with a necromancer for the purpose of making bacon.

Or, you could dig a huge pit in the middle of an embark and reconstruct Ocarina of Time's Lake Hylia, complete with water temple and fishing area. Then fill the thing with water and seal the dorfs in for all eternity.

Dig out a city, then carve out the rock and soil so that the surface is the only thing separating your city from the sun.

Basically, make an above-ground city underground.

Try building a city in the sky. At least 10 z-levels above the highest point of the map, and the only supports are a pillar with some ramps for merchants and immigrants.
Bonus points if you have a magma sprinkler system installed under your city, so you can rain death upon your enemies!
