Simple things like what?

Modding out traps (Work around: Disabling every single engineering skill works), figuring out how to disable caravan trades of inorganics(DEEP_SPECIAL on metals works fine, but what about it's reagents?), disabling walling self in (Work around: disable farming and force one to trade for it), modding individual happiness amounts (Can't stop social happiness bomb), etc.

You just need new definitions of "simple".

Make a giant elf that stretches to the top of the map that is being killed by the giant, magma shitting dwarf!

Alright well this doesn't have any features of the mod I'm working on, but it has the general idea:

A) Mod dwarves to learn at 10% experience rate
B) Take out all engineering skills (no traps magma or danger rooms)
C) Set all natural military skills to about Legendary + 25 (with skill rates, should net you maybe adept)
D) Set the goblin pop trigger from 3 to 2.
E) Set the depression personality trait to 100:100:100

F) weather the goblin hordes as long as you can without your dwarves going crazy.

I wish we could get proper zombie hordes.  The kind that shamble and moan, driving their captors insane as the groaning goes on and on, fingernails scraping against sheet metal while howling grates against the mind.

Either way, that doesn't sound appealing.  I'm all for a challenge, but having no mechanics and no skill is just suicide in a can.  It's not a challenge because there's no challenge to it, there's only swift defeat.  You have to give an opportunity to survive, and then meet that with a threat of equal force.

Cover the entire map with a magma cistern high above, with outlets regularly spaced in its floor so that you can deliver targetted magma strikes to any 3*3 group of tiles that you care to specify. Link it all up to a gigantic grid of levers.

Use this to draw glowing red hot pictures on the landscape below.

The magma printer is actually a bunch of small water reservoirs that you dig in the shape of letters. Then you steamroll the map with magma. The remaining obsidian is the ink :P

It's treated as completely normal because this is Dwarf Fortress.  There's absolutely nothing wrong with surrounding yourself with a wall of flames, only to later realize that you're surrounded by a wall of flames.
There's nothing that can't be solved by hurling fifteen roc birds at it.

I think I've decided to set [SPEED:0] for a while and work on Armok's Thunder, then turn speed to normal and test it out on whatever siege happens to be unlucky enough to get drawn into the crossfire.  For added Dwarf, I'll also attempt to drop a stock of booze and some food, for those drawn-out battles where there's enough time to take a break and eat during battle.  I may even attempt to drop the food directly into an intact dining hall, but that will prove difficult.  I could very well turn the cave-in into an art form!

Use the maximum embark size and create 4 different settlements on the cornors of the embark then link those settlements by subterranian roads (3x3 minimum), only have 30 dwarves per settlement. All 4 settlements must be atleast begun by the fifth year of the fortress.
While doing all of this maintain a militia of atleast 45 Dwarves at all times beyond the fifth year, you're only allowed Marksdwarves, axedwarves, and hammerdwarves. Before you finish the third settlement you must begin to wage a war on the underground caverns and conquer them with your miltia. Any and all living captured troblemaker dwarves must be made into gladiators and sent into the caverns to fight the horrors within, should they survive one year with a minimum of ten kills they may return to society as a hero. You must maintain atleast one handful of surface structures used to accomadate Human and Elven caravans, the surface structures can be made of any substance and must be completed by the 3rd year. A subterranian depot must be made for dwarven caravans. All efforts should be made to keep Dwarvan caravans seperate from the surface filth. Make sure all nobles have bedrooms where the entire floor of said bedrooms is composed of trapdoors that may be able to open and expose latter noble to a pool of indiscriminant justice. (magma) To top it all off should you succesfully conquer the caverns and keep them secure for a year without walls you may then wall them off and locate and do the same to the HFS.

If you fail to conquer the caverns before the 12th year you must recruit all avalible dwarves and prepare for an all out suicidal assualt against the caverns. Any dwarves that cannot be recruited (medical or age reasons) must be sacrificed to a lava shrine.

Required biome traits : Evil or Terrifying, with aquifer.

Alright DF community, I'm throwing myself at your mercy and I. Am. Terrified.

Pacifist game. You can't let any dwarf die, and you can't kill anything that isn't a food animal.

Make a stairway to heaven

- essentialy a stairway that springs up above a massive pool, as it turns in a spiral it is walled the entire way round by waterfalls, technicaly, you can do this with just 2 pump stacks if you think about it enought.

also: the pool must have no water source bar the initial filling up etc. therefore, if you screw up your rates theirs a grand chance of flooding the stair way into oblivion. -wich if you decide to make this into an entrance would be a great way of making a defence.

bonus points in a freezing biome.

bonus points if this stairway disects the caverns -all 3 layers- or runs around the entierty of the fortress as a massive pool etc.

another challange:

Water wall defence.

essentialy: 2 walls, the inner is 2 thick, the outer is 1, theirs only 1 tile between them. and at least 1 tile empty space between this wall and the outside. -magma sea or lava at bottom- The inner space must be floored every level, and have hatches/doorways linked to levers to allow controll of water in those sections, so that when toady implaments construction destroyers and diggers, when the wall is breached, the water can be diverted for repairs to be made after the seige is done.

what water you say? well: the top of this wall must come to a group of pumps that takes water from the bottom right to the top of the wall, ie from just above the magma sea to say +5 z levels. this floods the inner wall space so that when the outer wall is breached, it floods water out and pushes the invaders off of anything they used to bridge the gap outside the wall. -must also have sturdy roof made of walls, not floors, so any caveins are next to useless to cause- The pressure of the water pump forces any tunnel diggers to surface or die, as their entier diggings are flooded out.

The entrace must be ingeniously placed drawbridges -2 will be required at least- that does not break the wall of protective water untill sealed off via mechanisms and drained.

This Water Wall defence is good vs anything and everything bar flyers, so the top of the fortress must be a heavily fortified tower reaching into the sky.

The end result? you have a mega fortress with better defence than most.

The bonus points: do it with magma, and use an aquifyer as your internal source of water.
This turns it into the Magma wall defence. :)

Extra bonus points: permanent freezing biome with water. make it so that it only freezes once its pushed any future diggers to the surface etc.

Pick one of your first seven dwarves and make them the founder of an important bloodline. See how many generations you can keep the line going for. Perhaps the children of other lines should be disposed of somehow - maybe dropped into some kind of dungeon under the stairs where they can live on the scraps dropped down the shaft. Treat your bloodline like royalty, even if real royalty shows up later. Let the other royals tantrum when the alpha family get better rooms than they do. Tailor the fort to produce or trade for this family's favourite items and food.

OK, try this.

Find a lake or an ocean, or an area you can easily fill with water.  Your objective is to carve a fortress in solid rock and then drop it into the water in such a way that the entire fort is underwater, there is no way out, and the inside is sealed from the elements, hence making it watertight.

Therefore, you will need to find a geological feature around which you can put water, or some natural "hill" inside the lake.  In any case, it goes to say you cannot use constructions at all, or else they'll disintegrate once you collapse the whole thing.
