Although in the stockpile stone screen [z][stone], adamantine is now listed in the economic stones, it is still listed in stockpile restrictions as "other".  For example, create a stone stockpile, use [q] to change settings, and drill into 'stone' 'other' submenu.  I would sort of expect it to be either a metal ore (seeing as adamantine doors are described as "metallic") or at least under economic stone.
