Now, I admit that a little pork fat can taste quite good (think BACON), but this is just way too much.

I had to come in and post again because, after my initial revulsion wore off, I remembered hearing about this, which is not much worse really.

Crackling is fried skin, not fried or roasted fat.

Certain styles of crackling of the Lousiana cajun cuisines is almost all fat. There's a bit of skin there, but it's more or less a blob of fried fat.

Anyways, I think this stuff should be the food that provides the dwarves with enough calories needed for the extensive digging, construction, and fighting that they do. I don't see how they can get all their energy from eating a few plump helmets a year to be frank.

I think there was an episode of Dirty Jobs where Mike Roe made some of this stuff out of large strips of fat.

Actually, the food is just "kindling" for the metabolism fire.  They get all their sustenance from booze, and the solids help them digest and break down the alcohol.
