For Japanese Minors, I recommend Uesugi myself, which I believe is the easiest one of the lot.

But Japan nor the Knights Hospitalier are really good for a blind run, since they have quite a few new mechanics... well, that's the point of a blind run I guess, though. :P
Japan isn't good in particular, because he has to modernize. Kono is the easier one, in my opinion, if only because they can conquer their island due to the pirates, build a navy to get rid of them, and become invincible.

Watching. I haven't played MMU enough to know a whole lot, so I'll just generically vote for small nations that don't get pounded within the first five seconds or Georgia.

I'm not sure how possible that is for Venice. It ought to be, but as a Merchant Republic, keep in mind that there's no chance to ever become Emperor, without converting to a Monarchy at some point, and that isn't easy. upon that, it will make you loose most of the benefits of being a merchant republic.

Just download to the Mod folder and run the game from the "EU3.EXE" file. Then on the center bottom you should be able to pick the mods. I'd suggest you make a shortcut to that file afterwards and replace steam's own shortcut.

You also have to download the correct beta patch, because MMU does not work right with the most recent one.
You should be able to find that patch on the Magna Mundi mod download post.

Just extract the proper patch over the game folder in steam. Should be under steam/steamapps/common/europa universalis iii/
