Zeus - By praying to him before a match you gain his favor, and get + 1 to attack rolls
Posiedion - By praying to him before a match you can breath underwater even if you are not an aquatic race
Ares - By praying to him you get + 2 to damage rolls, but may go beserk, and no longer be able to control ones self
Apollo - By praying to him you, and your allies are not affected by the blazing sun, and gain + 2 to fire resistance
Hades - By praying to him you get a 1 use spell the GM will randomly choose
Hephatitus - By praying to him if your hp reaches critical point a bronze bull will come to your aid.

If you have any suggestions on matches I can add, or if I should implement stats go ahead, and tell me.

Well, I would toss it into the realm of mythology to make to make it more fun, for example...

7 champions vs 7 Hydras with 7 heads each!
Cage match vs flock of harpies!
Mirror maze battle vs the Gorgon!

I already planned on having the mythological creatures. Since, fighting a sea battle against other boats and hydras is fun.

Would you also like me to include races with special abilities ?

Are all battles meant to be to the death, or only some? As in reality, good gladiators are expensive. They usually used convicts to sate the crowd's bloodlust. Although that would make it less fun as a game, so it's up to you

Slaves and convicts are used for this type of entertainment.

( All races recieve no penalty when talking to there own race. )
Humans - Ambitious creatures, but they are far overpowered by the races of other gods. ( + 2 to trading rolls, No penalty when conversating with other humans, and starts with 300 Denaris 
Lizardmen - They are more of an underground amphibious race, but some have been captured, and are grand gladiators. ( No penalty when conversating with non-humans, + 2 when talking wiht your own race, and starts with Shoddy Rock Tipped Spear, and Tiger Fur Bamboo Shield )
Dwarves - These creatures are a rare underground race of master smiths, and mechanics. ( + 2 to smithing rolls, + 1 to rolls when fighting with dwarven made weapons, and you start with a Average Bronze Axe ( If you want another wepon tell me ), and a set of Leather Armor )
Centaurs - Half man, and Half horse. There main wepons are bows. ( + 1 to rolls when using bows, can move twice as fast as humans, and you start with 1 Below Average Cherry Bow, and 50 Rock Tipped Oak Arrows. )
Satyr - Goat men ( + 2 to rolls when using Satyr weponry, and you start with a Average Copper Dagger, and 25 Shoddy Rock Tipped Throwing Spears )
Dryads - ( You have to be female to play this race, you cna manipulate wood, and you start with two Average Sung Oak Daggers )

Yes lots of death, but mostly you will be killing the mythological creatures. Which the Gods can replace easily. At first you will only fight humans, since you start out at the bottom, but you work your way up to full on mythological creature battles.
