I'm starting to make encroachments on hell. I'm planning on building an engraved dining room down there (of course!) as well as probably my king's rooms (if he ever shows up!). I'm also tempted to try and irrigate it so I can grow plump hellmets.

It's treated as completely normal because this is Dwarf Fortress.  There's absolutely nothing wrong with surrounding yourself with a wall of flames, only to later realize that you're surrounded by a wall of flames.
There's nothing that can't be solved by hurling fifteen roc birds at it.

So I accidentally breached hell today in 3.19. My military was outfitted probably 75% in copper armor, 25% in steel armor, but all with steel weapons (except the hammer dwarfs, who had silver). My military was probably about 60 dwarves, as my usual practice is to automatically draft all male dwarves after the first few migrations. Most of them were Legendary in at least their weapon, having been trained by a danger room.

I expected to have my ass handed to me, and at first it seems like I was. After about half of my military was down, I started recruiting peasants in hopes of simply providing fodder while my remaining military chopped them down. I went off to do some things, and after about an hour and a half of fighting, I find that all the demons have been killed! I only have about 20 military dwarves left, and lost about sixty dwarves total (forty military, 20 non-military), but nevertheless stopped the horde in its path, and still with 101 dwarves living!

I'm crossing my fingers that I don't get a tantrum spiral, though. Everyone's quite unhappy now...

I also hope to get lots of delicious demon roasts and the like.

Dwarf population before the attack? cavern layers?embark size? map size? Water or magma flowing? Fps during the attack?

I want to do this, but I keep dying an fps death. I breach hell, and my hell freeze.
With a 100 population I died a fps death when breached it. Down from 25 to 5.

BTW, this is cool. I've yet to get to the point where I think I can take on hell. Me thinks it might be awhile :|

When I used to be more of a dirty cheater than I am now a scientist, I used DFReveal to see where all the cool minerals and caves how the demon's eerie caverns where, along with the constructions. Never happened to suffer from FPS death, but that's prolly 'cos i never engaged them. Used to laugh as I trapped troglodytes.

Those where the days...now I just smelt adamantine out of thin air and make platinum warhammers en masse

My experience with hell is that the breaching entrance is always in the ceiling with no way of getting down (other than falling, if you're an adventurer).

How do you manage to get your fortress down there?

Yep, DF2010 specifically allows down staircases to be built from above as a temporary solution to going down from teh ceiling. Toady wanted to do ropes and stuff but didn't make it in time.
