Bridges+Water=Pressurized water?

I just had an idea to design a trap hall involving a bridge and a pool of water.

If you were to build a drawbridge, 2 wide, that was raised by default, would it pressurize and move the water when it came down again, or just vaporize the water underneath it?

Vaporize sadly. The only way to pressurize water is to pump it, or bring it down from a higher Z-level.
In general, drawbridges will not give you any of the physics-like stuff you would normally expect of them. They can basically only fling stuff in random directions, or vaporize it. Nothing else.
