Embark Profile Resources

In setting up my embark profile, I've noticed that several resources are missing. I've read on the DF wiki that this is affected by the parent civilization you chose when picking the site. Some of the resources were key for what I'm trying to do with this fortress (i.e. iron anvils were missing), but to select a different civilization I (think) I'd need to abort the game, find the site again and choose a different parent civ. This could be tedious given that there were 8 or 9 to choose from and with my luck (and neglecting what is probably a random thing), the resources I want will be with the last one in the list.

Is there a more practical way of knowing beforehand what resources a particular civilization will provide or be lacking in?

Their locations, I guess.  In this update, it doesn't apply, but before hand you could go to their site and look at the layers of stone and what not and make an educated guess.  Though here's a bit of info; Since Steel doesn't have any natural ore, every civ has access to it.  While a Steel Anvil is 300 EP, three times as much, it is always avaliable.  =)

Heh yep, steel anvils were there, but they cost too much. I am making this fort in .18 as I'm not quite ready to plunge into a long-term game of .19.

I had a civ with no anvils whatsoever. I looked and looked but there was not even an anvil section.

Did you have 300 EP free?  Things don't even show up unless you can afford the cheapest item from that category.

Anvils aren't really the problem, although I have yet to encounter a civ with actual iron anvils instead of steel.

However, some civs don't even have axes for chopping wood. And since pots don't work that well currently, that's pretty much a gamebreaker.

Use Training Axes.  My Tower-Cap Training Axe can cut through any amount of wood, no problem.
