Chickens and turkeys and things don't need grass.  And grazers don't need water.

I've had animals graze on the cavern floor (mosses and whatnot) just fine. So it doesn't have to be grass as long as it grows on soil.

If I want to tie them up in stalls to reduce pathfinding and bull-pucky on the floor, is there any way for me to build them a manger?  I know I could tie/chain/restrain them up in the middle of a 3x3 patch of grass in a designated pasture zone, but what about my typical breeding stock setup where the animals live in 1x2 "notch" stalls in the walls?

I wouldn't do that unless you removed the need for food, or waited until haymaking comes out.  When we get haymaking, you'll be able to build proper barns and nooks to stuff animals away in, as you'll be able to bring food directly to their enclosure.

Creature size is proportional to the amount of meat that they yield when slaughtered. So a horse requires 10x more grass than a goat. A goat requires 100x more grass than a rabbit. An elephant requires 10x more grass than a horse, or 100x more than a goat, or 10000x more than a rabbit.

So I can't have a war elephant herd anymore?

Sure you can, just be ready to feed it a lot.  :)

But unfortunately mangers aren't around (at least for a while) and I doubt anything bigger than a rabbit will last in a 3x3 area. I haven't tried it though, you might get away with a goat.

What does this mean?  Do they have to sit in the box so long that they die from starvation, or do they get stuck somehow?

They appear to take the "sit on nest" job over the "eat" job, and will starve while trying to hatch an egg.  Bugs yay!

Yea I noticed that with modded in chocobo.  Somewhat bothersome.

A goat seems to survive in a 3x3-2 area just fine, I've had one chained to my front gate for 2 years now. So it seems a goat only needs about 7 tiles to itself to live. 

P.S. I'm actually not entirely sure it is eating.  Other than the 2 boulders, all the tiles still have grass.

Hmm. My (now three) water buffalos strip their pastures of grass VERY quickly. It's a real bother, can't imagine how much even a small herd of (war) elephants would need. I still like this feature, though. :)

Try 'k'-ing over the grass and see if it's dense or sparse? (Not that we know yet if that's an indication of the grass being eaten...)

Dying (ceasing to be alive) is also not a Moodable skill. Even totally unskilled Dwarves seem to do it correctly.

If a goat can survive on 7 tiles of grass (we don't know if it can survive on less), and a water buffalo requires 20x more food than a goat, each one might need 140 tiles of grass. 12x12=144 for pasture size for one buffalo.

An elephant might need 700 tiles of grass? 27x27 pasture? A 48x48 area block might only support 3 elephants.

They are either eating or trampling it down for me. My pasture is definitely much more bare with sparse grass and outright sand patches everywhere. 

EDITL And while a pain, elephants eating a lot is pretty realistic. It might get easier when you have hay and such though.
