From a gameplay standpoint, why would I update?

Reading through some threads on the new version, I'm seeing no reason to update to give myself a harder time.  I guess metals were too easy to come by and you could find perfect sites, but doing so took time and I usually had to end up with a flaw somewhere anyway.  I'd rather play another game than restart endlessly because I can't mine or trade for certain materals now, and there's absolutely no chance I'll play if the layers info being taken out was on purpose (or I'll wait for it to be modded back in).  Why give us an update that's harder where the game didn't need to be harder when I can just keep playing the old version?

There is no reason for you to update.  Its not like people are pressuring you too.  :)

There's a ton more features.

I too am irked by the new metal system, since invariably I'm always going to search for a map that has multiple shallow, deep, and flux now, which just adds that many more things to my list of "what I need", which is frustrating.

But I can't resist bees and pottery and eggs, oh my!

The great thing about DF is that you can stop at -- or revert to -- any version you like.  I'm enjoying 31.18 and probably won't upgrade until 3D veins are more abundant, but I am dying to try the new trade system on a microfort.  I'm sure there are pUrists who still play the 2D version, but part of the fun is that Toady's constantly-evolving universe keeps things challenging.

Because there are rhinos and puppy farms.

31.19: The first version a goblin snatcher actually managed to steal a child. After cutting his right foot off and puncturing a wardog's lung. There was a blood trail following the goblin, and the child's blood still litters my fort years later.

I, for one, have embarked in an area with plenty of wood and iron and am importing flux, coal, and steel bars from my caravans. My dwarfs are also living in a fort made out of mud.

I'm currently waiting for more migrants so I can get some more masons and finally assign some threshers/shearers/beekeepers.

Well I don't bother with every craft as it is, so adding bees doesn't interest me much.  Its cool from an immersion standpoint that eventually you'll probably be able to do every industry that would be in a similar time period irl, but gameplay-wise I don't need something else to add further complications.  I haven't downloaded it to try yet, but like I said, no layers = sticking with the version before this.

Also, did metal items not taking >1 bar get fixed?  Seems like that'd clear up too much metal in a hurry.

Truth be told it does just add some more industries for now. Bees, wax, honey and clay. Handy industries in the sense that it's a nice little way to get a bog load of cheap barrels (sort of, and they seem a little screwy so far) and some slow-growing food. I hope you can make super-mead out of the honey some time (maybe a 2 part "meal-like" drink? Brew Lavish Booze task?). Clay layers were pretty pointless before, and with less coal/lignite in embark sites you'll have to actually use your lumberjacks (and protect them if you want) to use the clay. But still, cheap barrels and crafts are a good thing.

But really, it's another excuse to put a dwarf outside, in harms way. We need these excuses in dwarven industry :D

The barrels aren't any cheaper because you need fuel (read a log per barrel) to fire them. Also you can make mead.

I think that this new version will be somewhat unsatisfying (unless you find the perfect site) until toady gets more of the improved trading and caravan features in so that you can get more of the resources that are not available at your site. (like importing lots of metal if you don't have any but being able to rely on your legendary clothing industry).

The outside importing he's working on, right now it does a good job at giving you what you ask for and what you need, but it doesn't give you enough.

I try to look at it this way, I'm having fun especially with something new that I know nothing about, and my dwarfs are happy and fed. Up until the point that goblins/beasts come, we shall remain that way.

Naturally magma works. But if you have magma then why are you worried about making cheaper anything?
