For what i played i had taken a liking of the Lord of the Test subgame , lot of content, danger and locations to get into :

There's a subgame that try to clone Minecraft as much as it can if you wish to play something that is more similar to it :

After that when it comes to mods if you wish to play with the default subgame that comes with Minetest, there are so much very different stuff that it's hard to make suggestions as it's really to each their own, but i think the most important mod to give those world the game generate a bit more life is the Mob_Redo mod that had some wildlife/monsters.

Of course you can also join on the many servers if you wish to play in MP, every servers have their set of mods so you'll get a different experience.
This is... bizarre... A game that not only supports mods, but builds them into the core of the game and even the concept of the game... I didn't even think I'd never see the day, the idea never occurred to me
technically Minetest is only an engine, but to give something for players to actually play it is shipped with a default subgame named "Minetest Game" , but as said it's rather bare bone (less things to do and discover than its obvious inspiration Minecraft by example), so either downloading a much better and complete subgame made by someone else or downloading one of the many many mods to improve this default "Minetest Game" is recommended
