adding skills later in the game?

hey guys, i started a few days ago with dwarf fortress... i took a miner, a woodcutter and a carpenter... but now i need a cook!
how can i get one?

one of the core mechanics of the game, you'll be swapping alot of jobs around.
so here's what you do
(v)iew a dwarv (p)references (l)abor and choose the skills you want active from the list (+ and - to scroll up and down enter to toggle)

Alternatively, if v-p-ling is taking too long, download Dwarf Therapist, which lets you marcomanage all your dwarves' job permissions. Also (I recently realized, but don't know how old news this is--if you hold Shift+Enter in the v-p-l menu, you will toggle the whole skill tree--thus instead of turning on butchery, then farming, then tanning, you can just activate farming/other wholesale.

What they're saying is that the skills you assign at embark don't lock your dorfs into an occupation for the rest of their lives. If you switch their labors, as detailed in the above posts, they'll start doing those jobs slowly and terribly, and eventually get better at them.
