You would get bored of being 'all powerful' fairly quickly. Take the hard road, for the sake of your own sanity.

I suspect the lives of the mighty (rich, influential, lucky, or in this case superhuman) are no less legitimate or engrossing than the lives of the meager.

Oh, I assure you that the lives of the mighty are fun times indeed. I've written about them. But there's a difference between 'mighty' and 'can do anything'. Once you have the latter kind of power, you no longer want anything. Except a challenge.
'How can you get bored if you can create anything? Per definition, anything should include "something to keep you challenged forever", no?

I would probably get bored rather quickly, as with anything, but really one thing that i really really want to be able to do is fly, nothing else really, except maybe for an infinite chocolate spring or something

I would travel back to the year 1937, and ensure that the Hindenburg was filled with helium rather than hydrogen, preventing the fatal accident and allowing large zeppelins to remain popular into the modern day, because zeppelins are awesome.

Create someone who has exactly equal power as me to be my opponent.  Weight it in such a way that it's extremely unlikely we'll ever be able to actually destroy each other.

There were actually much worse airship accidents back then, and most of the people on the Hindenburg actually survived.

I'd get myself a ridiculously large Katana, limit my power to relatively small but destructive things (Fireballs, shooting lightning. Standard magic), and go on a series of awesome fantasy quests. Also sci-fi quests. Also anything else that looks like it could be fun and exciting.

Because after seeing my first Anime, I've always wanted to be a stereotype.

What about turning the moon into a clock-work watch? You would have to design it yourself and will it into existence and it would tell the time!

On a related note, does anyone know of a clock-work simulation game?

On the note of swords, a blade so thin it slices atoms (lol) ordinary in size, unbreakable and always safely tucked away in my personal hammerspace (swordspace?) for when i need it to split the clouds in one awesome high powered swing

Become a superhero/God-Emperor of Mankind and use my power for the good of humanity. Because, honestly, how could I not want that? I know it's cliche in fiction, but if I could actually do it there would be no choice in the matter.

I'd annihilate the armies of the world and establish a benevolent dictatorship under my rule, enforced by machines programmed with my morals. I'd then create long range personal teleportation devices and give them to everyone, then give everyone an Earth-like planet each and allow them total reality control over their own planets. Earth would then be perfectly preserved as a historical site.
