Probably no reason other than it giving them a larger B-peen.

Arise, minion!

Alright, so I've started playing again, and I come to you guys with a question.

I've reached Dombnal of Zena, and i've discovered a large, castle-like room.
I'm assuming this is where I fight the Gaping Dragon, but I can't figure out how to get to the fog door that leads to it.

Right when you enter the room head right until you see a set of stairs going down. take it and pass through the fog

I'm feeling particularly masochistic today, so I'm gonna try this again.  I've completed it (sans DLC) as a lumbering cleric with a greatsword and got most of the way through with a lightly armoured spear + shield wielding pyromancer.  Any recommendations and/or reasonable challenges for my new character?

Well, it really depends on what you're up for. If you're smart you can get away with some pretty absurd builds. My last playthrough was an attempted PVP character with an admittedly moronic strategy: I only raised endurance and vitality with a couple points to cover the prerequisites for my weapons of choice. The end result was wearing Smough's armor set with a whip and crystal shield while being under 25% encumbrance. It was a little hard to tackle bosses in the beginning due to the sheer lack of weapon options, but once I got to the point where I could upgrade weapons everything ended up bordering on easy despite the fact that I was slapping things with a whip, with a few specific boss fights being the exception (DLC Chimera thing? Holy shit that wasn't fun)

I'd say try some sort of dedicated caster (Set a limit on stats if you want it to be a challenge). They're actually pretty fun to play... And I just recently discovered that dexterity increases casting speed. Wish I knew that when I was playing one!

Yeah, some kind of squishy sorcerer would be an interesting challenge.  I'll try limiting myself to daggers/rapiers without a shield and see how far I can get relying mainly on spells.

Go for dual-wielding shields. Or unarmed.

Dual-wield grass crest shields, rings should be Cloranthy and Havel's or Favor and Protection.  Mask of the child, rest of your armor is your choice but be careful not to raise your encumbrance and lose out on stamina.

Has anyone else done a SL1 Darkwraith run? I'm doing one right now and I'm at Sif.

Is it actually possible to cause a reasonable amount of damage with only shields?

That's just nasty, people are still buying the game.

The bone wheel shield can get nasty if it hits you.

There are already playthroughs on Youtube of SL 1 Naked Club runs.

Bah, I want to see a SL1 naked unarmed run. That'd be impressive.
