I keep them all for moods. There are more gems than there used to be, but I remember the forts where I couldn't find a gem to save my fortress from the ineviatble tantrum spiral. On the other hand, I cut boatloads of green glass, train up gem setters with the results, and then encrust everything with the cut gems I trade for.

EDIT: also, as has been said - windows. large gems make super valuable windows. EVERY dwarf stops and admires a well placed star sapphire window.

My Gem Setting workshop is surrounded by small stockpiles that only allow masterwork items. So I ensure that always those get decorated. Works like a charm.

I encrust every piece of furniture I make, right from the start of the fort. I like having decorations on things and my habit of mining out entire levels means I get a lot of crap gems to train up on. The large gems and gemcraft gewgaws I just give away to the caravans though, they're a kind of irritating byproduct to me.

Encrusting furniture. Once gem stockpile starts to overflow, it is encrusting time!

Purely to get rid of extra items that hurt fps and to free stockpile.

I tend to hoard gems myself. Once in a while I'd check wikipedia to see what they look like in reality. Nothing useful mind you, but fun for me anyway.

I keep all of my classy figurines of interesting stuff and encrust the crap out of em.  Either that or I do a field of skull totems around my entrance and try to encrust them all.  Let the world know the score.

I got my dwarves to encrust a rope and a bucket with every kind of gem and glass they could get their hands on, then used them to make a well.  The values of a well's components get multiplied by the quality modifiers applied by the two dwarves who construct the well (building designer, and mason/carpenter/metalsmith, depending on what the block is made of).  So constructing the well made my fortress's created wealth skyrocket.  I think I could have encrusted the mechanism, too.

I store them long enough to delete my save and make a new world.

I usually set up a fairly unimportant dwarf and have them cut gems forever. Nice to have around for moods, and should I want windows, I much prefer gems to glass (As I imagine them to be like stained glass).

The Tower of Fu, a massive wooden statue of a middle finger facing north towards the elven lands, is completed, crafted from 760 wooden blocks of differing types of wood.  It is designated as a stockpile for lye, potash, ash, and coal.

Sometimes they want a rough gem for moods. If you don't have glass up and running, that could be a problem. I'm sure you've thought of that.

I encrust furniture with them. Since I build above ground mainly, engraving it out of the question. So to keep the nobles happy, I add gem /bone/studded pieces of furniture to their rooms, to increase value. Plus just place encrusted items in hallways, to give happy thoughts.

Now this does not include the stockpiles of large gems, I put in the Hall of Heros, along with my artifact stockpile

Stuffing them into bins seems to be a good way to deal with trading early on. It'll also increase your fortress wealth.

I throw all of my gems/large gems/minted gold coins into a large stockpile in a deep down cavern room decorated with artifact furniture/food. Urist Mcdragonblood hoards over it like the greedy bastard he is, killing any cavern creatures that dare try to steal his stash!

All of the other dwarves are his slaves, and exist for the sole reason of giving him more treasure. If they fail to produce enough treasure, he will melt their children with his magma breath.

Outside of that, I look at what gems my nobles like and go out of my way to decorate their furniture with those gems. Gold rooms encrusted with diamonds are nice, but what nobles really want is for you to listen to their needs.

I generally hoard my gems.  I will cut a few of the more valuable ones to have lying around for moods, and will occasionally encrust some furniture, but for the most part the gem hoard sits there collecting dust.
