I seem to be rather nooby, but traditional gladiator pits to train soldiers, along with wolves as my chained sentinels.  I'm about to begin work on drowning chamber indoor plumbing and soothing indoor waterfalls.

My current project... a Magma-based Orbital Defense System fed from a 137-level pump stack, is probably as Dwarfy as I've ever gotten. It's capable of dropping 3,500 units of Magma on invaders in a single salvo.

... note to self: remember to close the front door first.

You just need your front door to be up one Z level.

One level won't do it. I'm using five 10x10 retractible drawbridges as hatches to drop the magma, right in front of my fort entrance; and each 7/7 Magma blob randomly scatters up to three tiles. It's quite possible (in fact, quite likely) to get them stacked two or three levels deep. In which case, they can flow down-hill  in a direction that would normally be "up-hill".

Well, there was this time where I killed 50-60 zombie and monsters with an army of dwarfs, untrained, who only had wooden armors and obsidian short swords.

Smoothing and engraving every single mined-out vein, turning one of them into a cemetery and the rest into sculpture gardens. Getting rid of every single piece of loose stone in the fortress just by stonecrafting might also count.

Never used Dwarf Therapist, mods or tilesets in all the years I've been playing.
I think Toady's confusing interface better simulates the experience of a bunch of disorganised drunken dwarves running a fort.

Well then, shape your entrance in a U-bend. Magma without pump can't rise inside the U, whatever happens.

I'm about to release a freshly-captured hydra against FBs. If I could turn also that part of the caverns into an arena with magma streams, I would, but sadly, I lack the resources to do that.
