How exactly does this work, In combat I have tryed this yet it seems to not move them at all, And all it does is stun them and realses your grip of them...

Or Am I doing something wrong?

If you're significantly larger than something, you can send the target flying when you throw them.  Some examples of "significantly larger" are:
A Bronze colossus to a dwarf
A human to a hoary marmot
A giant to an elf
Additionally the target is easier to throw while unconscious.  If you aren't significantly larger, you'll just send them a few squares, stunning them in the process.  If you are, and they hit an obstacle, they'll explode into their component bodyparts upon impact.

Really? I tried tossing giant cave spiders as a bronze colossus in arena mode and could only throw them at all if they were standing up.

In the wrestleing menu you throw correct, Then you press it and they will be thrown.

And occasionally, the obstacle dies too. E.g. a bronze colossus.
