You can disable all other types of jobs (hauling, cleaning, etc), but any stoneworking job would disrupt the construction. I'd just not have any other stone working jobs while working on the walls.

Give him a small burrow where the work area is. Then make sure there is some water/booze and food within that area.

He wants a workshop you don't have ready yet. Check his skill set.

Definitely check his skills.  Look for the dwarf's highest moodable skill level (typically a single Novice or Competent skill among a few dozen Dabbling skills) and compare it to this table from the wiki.

I highly recommend Dwarf Therapist for all your job-switching needs. The interface for this aspect of the game needs a little work.

There are a few ways to manage dwarves without going completely insane, but playing the game a lot gets you used to being at least a little insane, so you aren't as frustrated when dwarves take a break for a month right before they finish the magma trap.

You can use DwarfTherapist to assign labors more easily than the default interface.  For example, if I want a wall here now right now no not in five minutes, I make most of the dwarves masons, use workshop profile to keep the noobs out of the mason's workshop, and try to avoid building things like wells, which benefit from being built by a good mason.  Everyone gets up and runs and builds the wall, then I take their mason job away.  If I want the armorsmith go to build that steel breastplate I want, I turn off his hauling labors and hope he's not sleeping.  If I want the stonecrafter or miner to stick to their work, I turn off their hauling labors as well.  New migrants mostly have nothing but hauling labors, so the hauling still gets done.

If I want this particular room engraved or mined out, or if I want the broker to stop making mugs and go trade, I use a burrow.  The miner in particular ends up in a burrow for years -- a burrow that includes the housing block, the dining room, the food stockpiles, the places I want him to dig, and *not* the places that I've designated but don't want him to dig.

You have to know how to adjust labors and use burrows or your play experience will be a lot more frustrating.

Can't recommend Dwarf Therapist enough.

I'd be lost without it. Or just frustrated.

use the [j]obs list to remove a dwarf from a job you don't want him to do.

While adding magma to anything will make it dwarfy, adding the word "magma" to your post does not necessarily make it funny.

Remember that they differ between normal and magma driven forges/furnaces.

If this is his first fey mood, there's no way he's got magma access yet.

I always get magma before I craft anything (except some basic furniture and beds)... ... and before the first mood. And before the first caravan.
