I wouldn't be surprised if the concept of element changed a bit during the next 1000 years... back when I was in comprehensive school, they still taught us that protons, neutrons and electrons are the smallest particles that are known to exist (although I think quarks were already known to science back then, the curriculum hadn't adapted fast enough).

Just think about middle age themed high fantasy... expect in contemporary setting as imagined by people 1000 years in the future!
