Is it possible to have a pump pumping water such that it is positioned at the bottom of a reservoir, filling it from the bottom? Would the water just push against the pump and try to get back out, or what? I feel like being lazy about it.

No, a pump will only fill up to the level of the pump.

Pumps change water pressure so that the pressure is always set to the height of the pump. Once there's no room at the pump's level, it would stop working. You'd need a pump stack here. Alternatively, if you need to pump a long distance, you could use a bucket brigade.

Have the pump outside at the level where you want the water to stop. Dig the route for the water beside this, to the bottom of the reservoir, like so:

The water will then fill your reservoir from the bottom.
