What I'd really like is to eventually be able to wear a piece of stone or shell or wood or bone or something.  Do those materials introduce additional hazards, once it's healed?  I can imagine that some woods would be too porous and the skin might grow into them or something -- do they have to be lacquered or what?  There seem to be plenty of places that sell non-metal jewelry, but I'm having trouble finding info on potential complications etc.

Well, you certainly don't want to wear actual, raw sticks and bones and stuff.  Like that site listing explains, anything that isn't metal or plastic is going to be laminated or lacquered.  There shouldn't be any complications unless you're allergic to acrylic or something, but wearing any piercing that isn't laminated is probably an easy infection.  Really well polished bone might be safe, but since it would look plastic anyway, you might as well take the guaranteed option.

No more piercings for me - bad infection despite my taking good care of it, migrated all over the freaking place, and it still feels like crap where it was. But I'm pretty sure this was combination of the upper ear being all cartilage and because I sleep like a moron, and probably spent the night rubbing it against the pillow because my sleeping self thought it was itchy. The second is why I would never get a facial piercing.

BUT
I can certainly life viscerally through those who do, so I'm going to have to say I think of all the types discussed, some well-placed dermal anchors would look nice on you, although I have no idea how they actually work.
But definitely not the anti-eyebrow.
So of types discussed by you, yeah, I'd say an eyebrow (specifically ring if you can swing it) would look best.
