I'm looking for a bolt-action rifle, with the largest caliber available. Google gives me 50 sites selling stuff from assault rifles, to handguns. Any helpful information?

Shooting deer and rabbits. Maybe to scare off the occasional dog that won't go away.

Looking for some advice on buying one. Like when the caliber is just too much. Or tips like not putting the scope up to your eye when it kicks like a mule.

You don't need a huge gun for shooting deer and rabbits.  Rabbits will go down with a .22.  I'm not sure about deer because it's illegal to hunt deer with a rifle in my state.

Yes. I've been caring for a very old 12 gauge shotgun. Firing will knock you down or dislocate your shoulder though.

What are you allowed to hunt deer with? Bows okay? It would be pretty great if pistols were considered legitimate practice, but rifles weren't.

Which state? I've heard that here in NY we've got plenty of deer.
And geese. So frickin' many geeses. They shoot down airplanes.

But yeah, you don't need really high caliber for deer or especially rabbit hunting(unless the rabbit is literally the same size as Bugs Bunny). You'll only need the big guns for dangerous stuff like bears, because you want to bring those S.O.B.s down as fast as you can. A .22 might be a bit underpowered for deer. A quick Google-fu says a .270-.280 might work, but something in the .30 range might be better.

i want to figure out his state regulations before i give him advice, some states ban certain types of caliber rifles usually high power.

Primarily bows and muzzleloaders.  Pistols are classified as rifles for the purpose of the ban.  I think it's because of how far a rifle bullet can fly.  There have been a few big cases in the last few years where someone was shooting for fun in their back yard and hit a schoolbus or something a mile away.

SC. Muzzleloaders, bows, and crossbows are allowed for deer. Rabbits, bears, alligators, coyotes, armadillos, turkey, small game, and migratory birds may be hunted with any caliber rifle. Special rules are applied to some situations, such as night.
Edit: SC only has laws banning automatic weapons. I'm looking for a bolt-action rifle that can kill an alligator.
