I have a single axedwarf that I send around the map, killing everything. So far she has been successful, suffering only a single bruise on her foot at the hands of a cougar. However, none of the animals she kills are being butchered. They are not forbidden. Do they need to be taken to a stockpile first or something? Or am I just going to have to get a hunter for this?

The corpses are counted as refuse, and are outside, so you either need to turn outside refuse gathering on in the [ o ]rders screen, or make refuse stockpiles under them.

Corpses need to be in a refuse pile near the butcher's shop in order to be butchered.  To get them there, press (o) - (r) - (o) to enable gathering of refuse from outside.
