Thanks for all the advice. Fortress is running smoothly, but I'm having a couple problems with setting up farms.

I've tried collapsing ice floors onto stone, but that seems to destroy the "floor" of the stone, revealing the wall beneath and treating the upper area as "Open Space". Needless to say I can't make a farm on it.

Make a door or floodgate at the bottom and drain the water off into a new room where the floor is intact.
