Thank you.

I'll have to experiment with some pressure plates to automate things.
I have been wondering whether a constant "on" signal (or "off" in the case of drawbridges and fluid) is generated by say 7/7 water on a plate set to 7/7.
Or will that signal be generated as soon as there is 7/7 water, tunring off 100 ticks (I believe it is) later?

Yes, a pp set to 7/7 liquid will remain 'on' until the liquid drops below that level.

Just try it! Its not like you die IRL if Urist McMiner falls into magma.

You could also just do it manually. I prefer having manual control for those things rather than rely on pressure plates. I just don't trust pressure plates for some reason.

I think filling a large cistern would be better done manually.
However, I feel it's my duty to set up some needlessly complicated automatic system involving magma.
