Just dig down there and build a little tunnel to the shaft that connects to the fortress like so:
HXXD
UOOU

X=wall
D=Down stair
U=Up stair
O=Dug out wall
H=Hatch cover/Down stair combo.

You will be able to enter and exit the caverns but when a building destroyer rolls along (troll, FB, demon etc...) you can lock the hatch and they won't be able to destroy it because they are stuck below it. Building destroyers cannot destroy hatches from below yet.

Dont worry about it dude, not digging to the third caver layer doesn't make you un-dwarfy. I haven't done it yet either, mostly because there's like 6 fb down there. Like Musashi said, as long as the desire to gain access too/use magma is there you're good.

I'm not planning on digging down that far in my current fortress. It has a volcano, and flux stone.  All I really need to do is dig down to the marble, and I'll be GOOD!

I was digging down in my fort (channeling, really) and I breached the cavern.  Seeing as I was just there for the under ground river, I just dug over, channeled out a spot and built a well.  I'm drawing water from about 6 z-levels down.

I suggest you dig an exploratory shaft unconnected to your main fortress(es). That way you can safely go down and check things out without getting unwelcome visitors in your dining hall.

Of course, if you dig into
