Still, seems a little odd to see a nonsentient race with profession tags, especially since it's only the giant ones. I've seen normal lions in the same save file, they were just "Lion".

I've seen alligator and sasquatch recruits too. Basically worldgen is tagging the wild animals with the recruit label for whatever reason. It's a known bug.

well, there was this one fortress someone posted about. His first fortress was abandoned with one member having gone berserk. He made his second fortress nearby and the dwarf that was berserk showed up with all these animal followers. The animal followers even had gods they followed and names, and each could be tracked through legends, as well as their children.

Aye, it sounds like they became historical figures somehow.  In adventure mode, when you do not know the name of a historical figure, they are listed by the game to you as [race, profession].  Although if you (l)ook at their (d)escription you see their name at the top center of the screen.  Also on their body parts and fluids.

Remember zombie peasants from 34.11?  Same bit, except those zombies were living somewhere, a civilian role.  Hence you would get tile descriptions like
'Here you see a peasant corpse corpse surrounded by several mangled peasant corpse copses and several other objects.'

I drained the blood of a sleeping human for several times and he is still alive!
Is it because I am not thirsty enough?

Has anyone ever managed to take down a demon law giver? Or are they considered impossible to beat no matter how much the RNG is on your side?

??? They're demons.  They have grand master skills across the board and often have other special goodies on their side, like flight, fire, or cave-ins.

Its as possible as any demon, especially considering they dont do much once they come into power.  Maybe a few murders if you are lucky.
I think the bigger problem is actually getting to them without a crash, or with a playable framerate.

Blunt weapons.  They pulp Body parts easier, don't typically create extra pieces that can reanimate or create miasma.
Cutting weapons are more likely to sever parts than pulp, leaving extra pieces lying around.

In fortress mode?  (1)hammers and (2)maces.  Spiked balls in traps.
In total?  Arguably human 2handed weapons.  Or maybe a coffin stuffed with all the corpses of your slain foes.

Is steel obtainable now? (Other than Kobolds/Dwarf Bandits/Retired Fortress) From trading with Dwarf settlements. If so, where and how?

Also are Dwarves now recruit-able?

Trade Depots for all forts are on the topmost level.

Dwarven travelers will sometimes have steel armor/weapon, but don't hold your breath.  I personally gave my humans steel.

Will the trade depots ever have steel equipment? What about recruit-able dwarves?

What is a good, but realistic armor build in the new version? (This means, no X6 Leather Hoods/Cloaks X3 Mail shirts etc.)

Is bronze now as good as iron, or is iron still superior? (And why?)

Can wooden shields still deflect dragon flame?
